Tuscan Roast Pork

Inspired by traditional Italian flavours, our Tuscan Pork Roast combines tender pork with herbs, garlic, and olive oil for a beautifully balanced, aromatic roast.

Cooking Time: 50-60 minutes


Ingredients:

  • Western Plains Pork - Pork Loin Roast rind off 1.5 – 2.0 kg
  • 100 g Green olive tapenade
  • 10 slices Prosciutto
  • 250 g Mozzarella cheese, sliced
  • Olive oil
  • Salt and Pepper
  • 150 g Rocket leaves, washed
  • 50 ml Balsamic glaze

Method:

  1. Pre-Heat Oven 180ºC
  2. Cut slices along the length of the pork loin at 1 cm intervals 2/3 of the way through the loin.
  3. Spread a little green olive tapenade inside each slice.
  4. Place a slice of mozzarella and prosciutto inside each segment and place roast into a shallow baking dish.
  5. Brush roast with a little olive oil and season with salt and pepper.
  6. Roast pork in the pre-heated oven 180⁰C for 25 minutes per 500 g. Allow roast to rest 10 minutes prior to serving.
  7. Slice and serve over rocket salad leaves dressed with balsamic glaze.
